Grandma’s Chocolate Mousse

Ingredients
For the Chocolate mousse:
2 tsp. gelatin
2 ½ tbsp. cold water
2 ¼ cups semi-sweet chocolate chips
3 cups heavy cream, divided
½ cup powdered sugar
¼ cup slice strawberries

For the Ganache topping:
2/3 cup heavy cream
2 cup semi-sweet chocolate chips


Mousse
1) In a small bowl combine gelatin and water and let sit 5-10 minutes.
2) Place chocolate chips in a heat proof bowl. 
3) In a small saucepan bring one cup heavy cream to a simmer then remove from heat. Whisk in gelatin and stir until dissolved.
4) Pour cream over chocolate chips and whisk until melted. Let mixture cool, stir occasionally.
5) In a large bowl, use a hand mixer and beat the remaining 2 cups heavy cream with powdered sugar until stiff peaks form.
6) Stir in 1/4 cup whipped cream into melted chocolate mixture. Gently fold in the remaining whipped cream until fully incorporated.
7) Place mousse mixture into a bowl and refrigerate until set, 4-6 hours.

Ganache
1) In a small saucepan over low heat, heat the heavy cream.
2) Place chocolate chips in a heat proof bowl and pour in hot heavy cream. Let sit 3 minutes, then stir until completely smooth.
3) Refrigerate for about 15 minutes until slightly thick then spread over the mousse.


Place into small bowls or ramekins and garnish with fresh strawberries and whipped cream.
