Serves: Approximately 12 to 16
INGREDIENTS:
- 2 to 3 pounds cooked chicken, shredded or chopped
A rotisserie chicken may also be used. - 4 (32-ounce) cartons organic vegetable broth
- 1 bag carrots, peeled and chopped
- 1½ cups diced celery, approximately 5 stalks
- 1 medium onion, diced
- 1 cup diced green bell pepper
- ⅓ cup chopped fresh parsley
- 2 tablespoons curry powder
- 1 teaspoon turmeric, or to taste
- Oregano to taste
- Salt and black pepper to taste
- 2 cups uncooked pasta of choice
- Extra-virgin olive oil or butter, as needed
- Water, as needed
DIRECTIONS:
- Add a small amount of olive oil or butter to a large stockpot over medium heat.
- Add the celery, onion, green bell pepper, parsley, curry powder, turmeric, oregano, salt, and black pepper. Pour in a small amount of water to prevent the vegetables and seasonings from sticking.
- Cook the mixture for 10 to 15 minutes, stirring occasionally, until the vegetables begin to soften and the flavors come together.
- Pour in the vegetable broth and bring the soup to a boil.
- Add the chopped carrots. Reduce the heat slightly and cook until the carrots begin to soften.
- Add the pasta and cook according to the package directions, stirring occasionally, until it is tender.
- Stir in the cooked chicken and continue simmering until the chicken is heated through and the carrots are fully tender.
- Taste the soup and adjust the curry powder, turmeric, oregano, salt, or pepper as desired. Serve warm.
Tip: Because pasta continues to absorb liquid as it sits, keep additional broth on hand when reheating leftovers. You may also cook the pasta separately and add it to each bowl before serving. The soup freezes best without the pasta.
