Inspired by Paris, refined in Michelin-starred kitchens, and brought home to Lafayette, Jane's French Cuisine offers a dining experience unlike any other in Acadiana.

In Lafayette, there is a building that holds decades of memories. It was the final home of a beloved antique shop owned by Jane Fleniken, who spent more than 60 years in the antique business and became a familiar face to generations of local residents. Today, that same building has been thoughtfully transformed into Jane's French Cuisine, a fine dining restaurant that carries her name, her warmth, and her legacy forward.

William Baxter, chef and owner, is Jane's grandson. He grew up watching her appreciation for beauty, craftsmanship, and hospitality. In many ways, his career as a chef is a reflection of her influence. It was Jane who first took him to Paris, booking tables at some of the city's finest restaurants and showing him what food could truly be. "She would rather spend her inheritance taking me to the best restaurants in the world than leave me money," William recalls with a laugh.

Those trips changed his trajectory completely.

By then, William had already built an impressive culinary résumé. He trained at the French Culinary Institute in New York City, cooked in Manhattan and Miami Beach, and spent time at two of New Orleans' most celebrated restaurants, Stella and Bayona. He then moved to San Francisco, where he spent nearly five years working in Michelin-starred kitchens, honing a standard of excellence that he would eventually bring back home.

When Jane passed away and his mother inherited the building, the vision came together. After navigating city zoning approvals and nearly two years of renovations, William opened Jane's French Cuisine in 2020, creating a tribute to his grandmother while bringing a unique dining experience to Lafayette.

What sets Jane's apart is both its pedigree and its philosophy. The menu is small by design: a curated three-course offering that changes with the seasons and William's inspiration. "There's elegance in simplicity," he says. "I would rather have five of the best dishes in town than 12 mediocre ones." That principle extends to his sourcing. William consistently invests in the finest ingredients available, from wild Pacific salmon arriving fresh from Oregon and Washington to specialty proteins and produce that most local restaurants simply don't seek out.

The result is a dining experience unlike anything else in Acadiana. With approximately 40 seats inside and a charming outdoor patio, Jane's offers an intimate atmosphere that feels worlds away from everyday life. The service is attentive, the ingredients are thoughtfully sourced, and the building itself carries a story that spans generations. For Acadiana residents, it's a reminder that some of the most remarkable experiences can be found right here at home.
