Coconut Cream Pie

This pie is delicious year round, but I save it for the holidays! I got the recipe at my bridal shower from one of my closest friends.  

5 tablespoons cornstarch
1 cup sugar
¼ teaspoon salt
2 ½ cups milk
¾ cup half and half
1 cup heavy whipping cream
3 egg yolks
2 tablespoon butter
1 teaspoon vanilla
½ cup coconut

Mix cornstarch, sugar, and salt in a 3-quart saucepan.  
Add milk, half and half, and whipping cream.  
Cook over medium heat until smooth and thick.  
Pour small amount of hot mixture into egg yolks, then pour back into saucepan.  
Cook another 2 to 3 minutes.  
Remove from heat and add butter, vanilla, and coconut.  
Pour into pre-baked pie shell (1 large or 2 small) and chill. 
Top with whip cream.
