Summer Rainbow Salad


The next time you’re looking for a healthy, delicious, and colorful side salad to eat with a meal, look no further than this nutritious salad filled with the vitamins and minerals you need! 

Salad ingredients
  • Lettuce - one heart Romaine 
  • Tomato - 2-3 
  • Onion red or yellow - ¼ small
  • Cucumber - ⅓ medium 
  • Avocado - 1 
  • Carrot - 1 large
  • Feta
  • Kalamata olives
Directions
  1. Dice lettuce, tomato, onion and cucumber finely into a large bowl.
  2. Shred carrot, and add to bowl.
  3. Next, add feta cheese, olives, and avocado *If you plan on refrigerating it for later, wait to put the avocado on. 

Dressing 
  • Olive oil - 3 tbsp 
  • Lemon juice - 1 lemon
  • Garlic - one clove
  • Onion flakes - one tbsp
  • Mint - one-two tbsp
Directions
  1. Combine ingredients together into a small cup.
  2. Stir well.
  3. When you are ready to serve the salad, pour the mixture slowly into the salad.
  4. Stir the salad very well and enjoy!
