From Scraps to Spotlight: Shemar’s Oxtails & Beans
New Wolf Ranch neighbor Shemar Spence hasn’t wasted any time bringing big flavor to the community. For him, oxtails aren’t just a dish—they’re a story. Once considered scraps, oxtails have risen to become one of the most sought-after cuts of beef, and Shemar’s recipe shows exactly why. With a Caribbean twist and his own Naturebond Green Seasoning blend, his oxtails and beans are rich, comforting, and a true “crème de la crème of the cow.” Serve it up with rice and peas, and you’ve got yourself a plate of island comfort right here in Texas.

Ingredients:
2 ½ pounds oxtail
1 tablespoon browning sauce (grace browning)
1 tablespoon Maggi All Purpose
1 tablespoon garlic and herb seasoning
3/4 tablespoon of Naturebond Green Season Blend
¼ teaspoon Season to di bone
¼ teaspoon ground cayenne pepper
2/3 tablespoons Badia Complete seasoning
2 tablespoons coconut oil
2 diced potato
1 onion chopped
4 garlic cloves minced
3 cups distilled water
1 bunch fresh thyme
2 bay leaf
2 tablespoons unsalted butter
Instructions:
Place the oxtails in a big mixing bowl and add in all the seasonings and toss well. Add in the condiments and let the oxtail marinate for 2-4 hours Place a large pot over medium-high heat and add coconut oil. After a minute, add in the oxtail and toss periodically for 10mins to sear them until browned. Meanwhile, chop the vegetables into small pieces, except the thyme sprig and scotch bonnet. Reduce to medium heat, then pour in the water and stir well. Place in a pressure cooker or a crock pot and add another tablespoon of Naturebond Green Seasoning Blend and set for 15mins to soften meat. When meat feels tender, remove from the crock pot or pressure cooker. Add in the vegetables and cover them with a lid, leaving a crack on the side. Simmer for 10-15mins if you want them to fall off the bones. Make sure to stir periodically. Add in the butter beans during the last 5mins, then cut the fire off. Yeah!! I’ve added personal touches by the method used to prepare and also the main star seasoning on the dish from my other company Naturebond. Has an incredible mixture of fresh green herbs and spices that’s elevate any dish. Oxtails goes great with rice and peas. It’s a Caribbean staple.
