Fresh and Flavorful: Mediterranean Herb Meatball Bowl
A bright, herb-packed weeknight dinner that’s light yet satisfying—perfect for warm-weather feasts or cozy gatherings year-round! Added bonus, leftovers make a delicious lunch the next day!

Mediterranean Herb Meatball Bowl
Ingredients:
• ½ cup slivered almonds
• ½ cup arugula
• ¾ cup fresh herbs (dill or parsley)
• 1 onion, quartered
• 1 large garlic clove, peeled
• 1 lb. ground lamb, beef, pork, or a combo
• 3 Tablespoons olive oil
• 1 tsp salt
• Freshly ground black pepper
Instructions:
1. Place the slivered almonds into the bowl of a food processor. Blend for a few seconds to roughly chop, then put into a medium bowl. Add arugula & fresh herbs of choice to the processor, blend for a few seconds to roughly chop, & add to the almonds.
2. Peel garlic & quarter the onion. Place in the food processor to form a smooth paste & add to the bowl. Add the meat of choice, 1 tablespoon oil, ¾ tsp salt & pepper. Mix well to combine.
3. Use a large ice cream scoop to form 2” wide & ¾” thick meatball patties. Heat a large nonstick frying pan over medium heat. Once hot, add the meatballs (as many as fit without overcrowding) & cook for 7 minutes, turning about 3 ½ minutes in, until golden brown & cooked through.
4. Keep warm while you cook the remaining meatballs.
5. Serve with tzatziki sauce over lemon orzo topped with tomato & onion salad (recipe below).
Tomato & Onion Salad
Ingredients:
• 1½ lbs tomatoes, chopped
• 1 seedless cucumber, peeled and cut into chunks
• 1 small sweet white onion, thinly sliced into half moons
• 1 green bell pepper, diced
• 1 scallion, diced
• Greek feta (packed in water), crumbled
• 1 Tbsp red wine vinegar
• 2 Tbsp olive oil
• ½ tsp salt
• Freshly ground black pepper
• 1½ lbs tomatoes, chopped
• 1 seedless cucumber, peeled and cut into chunks
• 1 small sweet white onion, thinly sliced into half moons
• 1 green bell pepper, diced
• 1 scallion, diced
• Greek feta (packed in water), crumbled
• 1 Tbsp red wine vinegar
• 2 Tbsp olive oil
• ½ tsp salt
• Freshly ground black pepper
Instructions:
1. Soak onion slices in cold water to mellow their bite.
2. In a large bowl, combine tomatoes, onion, cucumber, bell pepper, scallion, vinegar & olive oil.
4. Top with crumbled feta. Season with salt & pepper.
