Farmers Market Turkey Bake: The Ultimate Weeknight Comfort

This easy, make-ahead dish blends lean turkey with seasonal veggies for a wholesome, reheatable meal that’s perfect for busy nights—just warm it up and dig in.

Ingredients
  • 24 oz Ground Turkey (93% lean/7% fat)
  • 3/4 Container Reduced-Fat Feta Cheese
  • 2 Zucchinis, sliced
  • 2 Yellow Squashes, sliced
  • 1/2 Large Red Onion, sliced
  • 1/3 cup Black (or Kalamata) Olives, sliced
  • Large Can of Diced Tomatoes
  • Minced Garlic, Black Pepper, Smoked Paprika, Oregano (or any seasoning you prefer)
  • Tzatziki Sauce (mix in after baking)
Instructions
  1. Preheat oven to 400 F.
  2. In a large oven-safe pan, add and mix together ground turkey, zucchini, squash, onion, olives, tomatoes and seasoning. Crumble feta cheese evenly over the top.
  3. Bake uncovered for 20–30 minutes until heated through.
  4. After baking, mix in the tzatziki sauce while everything is still warm. Enjoy!
