Farmers Market Turkey Bake: The Ultimate Weeknight Comfort

Ingredients
- 24 oz Ground Turkey (93% lean/7% fat)
- 3/4 Container Reduced-Fat Feta Cheese
- 2 Zucchinis, sliced
- 2 Yellow Squashes, sliced
- 1/2 Large Red Onion, sliced
- 1/3 cup Black (or Kalamata) Olives, sliced
- Large Can of Diced Tomatoes
- Minced Garlic, Black Pepper, Smoked Paprika, Oregano (or any seasoning you prefer)
- Tzatziki Sauce (mix in after baking)
Instructions
- Preheat oven to 400 F.
- In a large oven-safe pan, add and mix together ground turkey, zucchini, squash, onion, olives, tomatoes and seasoning. Crumble feta cheese evenly over the top.
- Bake uncovered for 20–30 minutes until heated through.
- After baking, mix in the tzatziki sauce while everything is still warm. Enjoy!
