Did you know a great way to stay on a healthy track is to plan? The old quote “fail to plan - plan to fail “ is so true because without a plan we throw all of our decisions to the wind. I’ve been caught more than once with no plan and it doesn’t end well. There is a road map to good health and creating a plan is the first step. Recently, at the grocery store, I met a young mom with veggies and healthy options brimming in her shopping cart. She carefully examined the cauliflower and zucchini. I stopped to congratulate her on her gift she’s giving her family . One of my favorite ways to prepare zucchini (summers bounty) is to spiralize it. A favorite meal of mine is salmon on the grill, blackened, and garlic-lemon zucchini. It's super simple and always good! Below I’m sharing a tip for your zucchini.

Meal prep: The best way to make zucchini noodles for meal prep is to spiralize them in advance and keep them in the fridge uncooked. Pat dry and cook right before eating. They last 3-4 days this way, or up to a week if you use vacuum glass containers (I have them and they really work!).
