Salmon Paradise Bowl
Ingredients
4 salmon fillets
Marinade
4 tablespoons soy sauce - I've used low sodium soy sauce
4 teaspoons honey
2 teaspoon rice vinegar
2 teaspoon toasted sesame oil
2 garlic cloves
2 tsp fresh grated ginger
Bowl ingredients
1.5 cup cooked jasmine rice
1 fresh mango diced
1 cucumber diced
1 avocado diced
1 lime
Instructions
- 1. Slice salmon into large cubes (~ 1 inch / 2.5 cms in size). Remove the skin and any bones.
- 2. Add marinade ingredients in a container - soy sauce, honey, rice vinegar, sesame oil and grate in the garlic and ginger. Mix to combine.
- 3. Put salmon cubes in the marinade and mix to coat all pieces. Leave to marinate for 10 minutes or if you have the time for a few hours in the fridge.
- 4. Whilst the salmon is marinating prepare the cucumber, avocado and lime juice in a bowl; set aside
- 5. Dice mango and set aside.
- 6. Cook salmon in oven or fry pan until cooked approximately 10-12 minutes.
- 7. Assemble bowls with a scoop of rice, salmon, and top with cucumber mixture and mango.
- Optional spicy mayo, sesame seeds sriracha or green onion.
This is a family favorite requested at least once a week by my kids!
I serve it as a stand alone meal followed by a yummy dessert.
It’s always loved by friends eating over too! The best compliment is a repeat request!!
