Hot Buttered Rum Batter
New Year Traditions!
There's nothing quite like starting off a new year with a good reminder of times past! When asked what recipe reminds her of the NEW YEAR, Britton Falls resident Pam Stavropoulos giggled and said, a Tom & Jerry!!!
This recipe, similar to a traditional "Tom and Jerry" batter, makes a large batch that stores well in the refrigerator or freezer for use throughout the season!
Ingredients for the Batter:
• 1 lb (4 sticks) unsalted butter, softened to room temperature
• 2 lbs (about 4 cups) brown sugar
• 3-6 large eggs, room temperature
• 1 tbsp ground cinnamon
• 1 tbsp ground cloves
• 1 tbsp ground allspice
• 1 tbsp ground nutmeg
• 1-2 tbsp vanilla extract (optional)
Instructions:
1 In a large mixing bowl, combine the softened butter, brown sugar, eggs, and all the spices.
2 Using an electric mixer, beat the mixture on medium speed until it is light, fluffy, and very smooth. This can take anywhere from 5 to 30 minutes, depending on the mixer, and is key to a good consistency. Scrape down the sides of the bowl periodically.
3 Once mixed, transfer the batter to an airtight container or jar.
4 Store the batter in the refrigerator for up to several weeks, or freeze it for long-term storage.

To Serve (per mug):
1 Place 1-2 heaping tablespoons of the batter mix into a warm mug.
2 Add 1.5 to 2 ounces of quality dark rum.
3 Fill the mug with boiling water (or a combination of hot water and hot milk/cream for extra richness).
4 Stir well with a spoon or cinnamon stick until the batter is completely dissolved and the drink is frothy.
5 Garnish with a fresh grating of nutmeg or a sprinkle of pumpkin pie spice.
