"Bliss on the Beach" Birthday Cake

This indulgent dessert comes from Flo Gullickson's longtime friend Laurian, whose recipes are a hit at their regular card nights and dinners together. Known among friends as a true crowd-pleaser, this “Birthday Cake Bliss” is rich, nostalgic, and perfect for celebrations—or anytime you’re in the mood for a little something extra.

Ingredients
Yellow Cake Mix
Large Can of crushed pineapple include juice
Large box of Instant Vanilla Pudding
Large container of heavy Whipping Cream (16 oz.)
2 cups unsweetened coconut. (Toast at 350 degrees in oven for 8 minutes)

Directions
Using a 9x13 pan follow the directions for baking a yellow cake mix. While
the cake is baking heat the crushed pineapple in a small saucepan.
Remove the cake from the oven and poke holes in the hot cake with
toothpicks. Spoon the hot crushed pineapple over the cake evenly.
Refrigerate uncovered.
Prepare the instant pudding according to the directions and pour over the
cooled cake and pineapple. Refrigerate
Whip Cream. Spread the whip cream on top of the cake and pudding.
Sprinkle with toasted coconut.
