Too Hot to Cook?
These quick summer dinners make healthy eating easy!
If you’ve lived in Florida for more than five minutes, you know August is not the month for turning on the oven. By the end of the day, it’s hot, humid, and honestly… the last thing most of us want to do is spend an hour cooking over a hot stove.
The good news? Healthy dinners don’t have to be complicated. Some of my favorite summer meals come together in 15 minutes or less with very little cooking - leaving more time to enjoy an evening walk, a dip in the pool, or simply relaxing on the porch.
Here are a few of my go-to heat-friendly dinners:
Big Protein Salad Start with your favorite greens and pile on grilled chicken (rotisserie chicken works great!), cucumbers, tomatoes, avocado, berries, nuts, and a sprinkle of feta or goat cheese. Finish with a light vinaigrette for an easy meal that’s packed with protein and healthy fats.
Lettuce Wrap Taco Night Brown a pound of lean ground beef or turkey once and enjoy it for several meals throughout the week. Serve it in crisp romaine or butter lettuce leaves with salsa, shredded cheese, avocado, Greek yogurt, and fresh veggies.
Mediterranean Snack Board Who says dinner has to be traditional? Arrange hummus, sliced cucumbers, cherry tomatoes, olives, grapes, whole-grain crackers, turkey slices, smoked salmon, boiled eggs, and cheese on a large board. Everyone can build their own plate, and there’s almost no cooking involved.
Shrimp & Avocado Bowls Pick up cooked shrimp from the seafood counter and serve over microwaveable rice with avocado, cucumber, shredded carrots, mango, and a drizzle of your favorite Asian-inspired sauce.
Cottage Cheese Power Bowl Cottage cheese has become one of my favorite high-protein staples. Top it with sliced tomatoes, cucumbers, Everything Bagel seasoning, avocado, and a drizzle of olive oil. Pair it with fruit or whole-grain toast for a surprisingly satisfying dinner.
Charcuterie Night A little planning goes a long way. Keep fresh fruit, vegetables, deli turkey, cheeses, nuts, pickles, and hummus in the refrigerator, then pull everything out for a colorful “graze board.” It’s fun, balanced, and perfect for busy weeknights.
My biggest tip? Don’t overcomplicate healthy eating. Keep your refrigerator stocked with washed produce, pre-cooked proteins, and a few flavorful sauces or dressings. When healthy ingredients are easy to grab, making dinner becomes almost effortless.
