Taco Soup

This hearty one-pot soup combines seasoned beef, beans, corn, and tomatoes for a satisfying meal that requires very little preparation.

INGREDIENTS
  • 1 pound ground beef or ground turkey
  • 1 large onion, chopped
  • 1 packet taco seasoning
  • 1 packet ranch dressing seasoning mix
  • 1 can pinto beans, undrained
  • 1 can whole-kernel corn, undrained
  • 1 can Rotel
  • 2 cans diced tomatoes, undrained
  • 1 can black beans, undrained
  • 1 can kidney beans, undrained
  • 1 can water
DIRECTIONS
  1. Add the ground beef or turkey and chopped onion to a large pot. Cook over medium heat until the meat is browned and the onion is tender. Drain any excess grease.
  2. Stir in the taco seasoning and ranch dressing seasoning mix.
  3. Add the pinto beans, corn, Rotel, diced tomatoes, black beans, kidney beans, and water. Stir to combine.
  4. Bring the soup to a gentle simmer. Reduce the heat and simmer for 1 hour, stirring occasionally.
  5. Serve topped with shredded cheese, diced jalapeno, and sour cream.
