Red Velvet White Chocolate Cheesecake Bars

These Red Velvet White Chocolate Cheesecake Bars combine rich cocoa flavor with a creamy cheesecake swirl for a dessert that’s as beautiful on the table as it is delicious. Perfect for Fourth of July cookouts, neighborhood gatherings, or a sweet summer treat at home.
INGREDIENTS
For the red velvet layer:
- 1 box red velvet cake mix
- 1/2 cup unsalted butter, melted
- 1 egg
For the cheesecake layer:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup white chocolate chips, melted slightly and cooled
Optional topping:
- White chocolate curls or chips
- Red velvet cake crumbs
- Fresh berries
DIRECTIONS
- Preheat oven to 350°F. Line a 9x13 baking dish with parchment paper or lightly grease it.
- In a bowl, combine cake mix, melted butter, and egg until a soft dough forms.
- Press the red velvet mixture evenly into the bottom of the baking dish.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in vanilla and melted white chocolate until creamy.
- Pour cheesecake mixture over the red velvet base.
- Bake for 35–40 minutes, or until the center is just set.
- Cool completely, then refrigerate for at least 3 hours before slicing into bars.
- Garnish with white chocolate curls and red velvet crumbs before serving.
