Chicken Tortilla Soup Bar

This recipe is great for a small group, and everyone can customize their servings with the toppings of their choice, similar to a salad bar. Quick and easy, especially if you get a pre-cooked chicken from the grocery store or Costco. Also, it freezes well. Double the recipe and stock up your freezer!
 
Soup ingredients
2 cups of cooked and diced chicken 
3 (32 oz) boxes of chicken broth - approximately 12 cups
1 can of black beans, drained and rinsed
1 can of whole kernel corn, drained
1 large can of diced green chiles
1 can of diced tomatoes
1 packet of taco seasoning 
Chili powder and garlic salt to taste
Optional: Chopped carrots, broccoli, and cauliflower 
 
Toppings:
Jalapeños - diced
Diced tomatoes
Shredded Cheese
Sour cream
Cilantro
Avocados - diced
Tortilla strips
Limes
Green onions
 
In a 6-qt stockpot, combine all the soup ingredients and stir. Bring to a boil and then simmer for 20 minutes. (You can leave it on simmer for quite a while if you want). Prepare all the toppings, set the table, and ring the dinner bell!
