Refreshing Summer Treats in Red, White & Blue
July in Pinnacle Country Club is all about sunshine, gatherings, and cool treats to beat the heat - and what better way to celebrate the month than with festive recipes that are as beautiful as they are refreshing? This month, we're sharing two light and healthy summer favorites that are easy enough for a weekday and special enough for a Fourth of July celebration.
Blueberry-Basil Lemonade
Bursting with bold color and flavor, this lemonade is an elevated twist on a summer classic. The hint of basil adds a grown-up touch, but it’s still a favorite with kids—especially when served over crushed ice or topped with bubbles.
Ingredients:
- 1 cup fresh blueberries
- 1/4 cup fresh basil leaves
- 1/2 cup freshly squeezed lemon juice (about 3–4 lemons)
- 1/4 cup honey or agave (adjust to taste)
- 4 cups cold water
- Optional: sparkling water, crushed ice, basil or lemon slices for garnish
Instructions:
- In a small saucepan, combine blueberries, basil, and ½ cup water. Simmer for 5–7 minutes until blueberries burst.
- Remove from heat, let cool, and strain the mixture through a fine mesh sieve.
- In a large pitcher, combine the blueberry-basil syrup with lemon juice, honey, and the remaining water. Stir well.
- Serve over ice, or top with a splash of sparkling water for a fizzy finish. Garnish with fresh basil leaves or a few whole blueberries for a polished look.
Tip: Freeze leftovers into popsicle molds for a tangy frozen treat the next day!
Frozen Yogurt Bark with Berries
Cool, creamy, and packed with red, white, and blue – this frozen bark is perfect for snack trays, poolside treats, or a make-ahead dessert.
Ingredients:
- 2 cups Greek yogurt (plain or vanilla)
- 2–3 tablespoons honey or maple syrup (optional, depending on yogurt)
- 1/2 cup sliced strawberries or raspberries
- 1/2 cup fresh blueberries
- Optional toppings: granola, mini chocolate chips, coconut flakes, chia seeds
Instructions:
- Line a rimmed baking sheet or large plate with parchment paper.
- In a bowl, mix yogurt with sweetener until smooth. Spread into a ½-inch-thick layer on the parchment.
- Sprinkle evenly with fruit and desired toppings.
- Freeze for at least 3 hours or until solid.
- Break into pieces and store in a freezer-safe container.
Tip: Let kids “decorate” their own section of the bark for a fun, hands-on kitchen activity!
