Ingredients
For the salmon:
1 ½ pounds salmon
2 tbsp avocado oil
2 tbsp reduced sodium soy sauce
2 tbsp balsamic vinegar
½ tbsp honey
6 cloves garlic, finely minced
1 tsp red pepper flakes
½ tsp cayenne pepper
1 tsp freshly grated ginger
For the peach salsa:
1 avocado, diced
1 peach, diced
3 tbsp diced red onion
1 jalapeño, seeded and diced
2 tbsp torn cilantro
1 lime, juiced
Sea salt and freshly ground pepper
Instructions
Preheat your charcoal or gas grill
- Make the salmon marinade: In a small bowl whisk together the avocado oil, soy sauce, balsamic vinegar, honey, garlic, crushed red pepper and ginger.
- Pour the marinade in a large bowl and add the salmon skin side up. Cover and place in the refrigerator for no more than 1 hour.
- While the salmon is marinating, make the peach salsa. Add avocado, peach, red onion, jalapeño, cilantro, lime juice, salt, and pepper to a medium size bowl and mix until well combined.
- Once the salmon is done marinating, place on a piece of aluminum foil (with edges folded up to catch the juices) and grill directly over heat until white juices form on the top of the salmon. Pull the salmon off the grill and test to see if it’s done to your liking.
- Plate the salmon and top with the Peach Salsa
