Holiday Bites!
As 2020 comes to a close, we are all very anxious to celebrate the new year amongst friends and family. However, with Covid looming and safety still a top priority, the days of endlessly sharing dips and spreads are a distant memory from "the good ol' days." These adjustments do not require you to sacrifice fun while creatively whipping up appetizers over the holidays! One bite, simple snacks your guests can grab and enjoy.
Cucumber + Lox Bites
Ingredients:
- 1-2 whole English cucumbers, sliced
- 8 oz fresh sliced lox
- 1-2oz capers
- 8oz crème Fraiche
- 1 tablespoon fresh lemon juice
- 1 teaspoon garlic powder
- Salt/pepper to taste
- 2-3 tablespoon olive oil or avocado oil
- Fresh dill
Directions:
1. Slice cucumbers thick enough to hold topping.
2. In a small mixing bowl mix crème Fraiche, lemon juice, garlic, salt, and pepper. Cover and place in refrigerator while preparing capers.
3. In a small pan, heat olive oil over medium and add capers. Gently fry until slightly crisp, stirring occasionally. Drain excess oil from capers onto paper towel.
4. Layer cucumber slices with scoop of crème blend, lox, caper, and a pinch of fresh dill.

Low Country Bake Skewers
Ingredients:
- 1 bag tri-color baby potatoes
- 1 pound fresh peeled raw shrimp
- 1 cup fresh corn
- 1-2 cups of sliced andouille sausage (optional)
- ¼ cup old bay seasoning
- 2 tablespoon extra virgin olive oil
- Salt/Pepper to taste
- Small to medium size skewer sticks
Directions:
1. In a medium-size baking pan, add potatoes, corn, sausage, olive oil, and old bay. Mix well and cover with tin foil
2. Pre-heat oven to 375 and bake until potatoes are tender.
3. Once potatoes are tender, add shrimp and mix again.
4. Cover and bake until shrimp is cooked through (approximately 5-10 minutes)
5. Allow mix to cool and then stack onto skewer stick. On serving tray scoop corn over finished skewer and sprinkle with additional seasoning if desired for extra flavor.
