Tarragon-Lime Grilled Chicken

My dad always like to grill chicken for Father's Day. Here is one recipe I like to do for grilled chicken; this is so flavorful and the chicken turns out so juicy, it is one of my favorites, its easy too!
Tarragon-Lime Grilled Chicken
2-3 pounds of bone-in, skin-on Chicken thighs, and some Chicken breast tenderloins(for those who do not like "dark" meat)
Marinade-
1/2 cup olive oil
1/2 cup lime juice
2 Tbl chopped red onions
1 Tbl. dried tarragon, or 1/4 cup chopped fresh tarragon
1 tsp salt
dash of hot sauce (optional)
Mix well and put in a sealable zip lock with Chicken, make sure the marinade gets under the skin of the thighs.
Marinate for 4 hours
Set up grill for high heat, apple wood chucks for charcoal grill or Applewood chips are good!
For a gas grill, soak chips in water for 30 minutes, drain and wrap in aluminum foil, poke some holes in it, and put directly over the hot side in the corner. This will impart some nice smoke flavor.
Place the Chicken over direct heat, skin side down. Get some char on the skin, turn, and cook to an internal temperature of 165 degrees for the breast and 175 degrees for the thighs.
When done, place on a platter and cover with foil for 10 minutes.
While Chicken is grilling - With the leftover marinade, strain it, put it in a small saucepan, add half cup chicken stock, cook down to about half, and use for sauce for the Chicken.
A good side dish is to make some basmati rice according to package directions, drizzle some of that sauce on it!!! Really deliciousioso!!
