Bridge's End Brewing Company: Where the Beer Tells a Story

Situated in the village of Shawnee Hills at 9320 Dublin Road and at the end of the Scioto Bridge, this craft brewery and restaurant opened its doors in May 2025. Founded by retired surgeon Bill Schirmer, a long-time Dublin resident, the business is the realization of his 30-year dream and home brewing experience. Together with his wife Karen, Bill has created a welcoming community space dedicated to serving high quality beer and food in a comfortable, home-like atmosphere. Though Bill claims (jokingly) that Karen handles the enjoyable tasks, both work diligently toward success.

Our experience began with a full brewery tour, where Bill showed us everything from grain storage to tanks holding finished, house-brewed beer. Bill and his team demonstrate expertise and dedication throughout every stage of the brewing process to ensure the best quality beer for everyone to enjoy.  There are no shortcuts here, right down to the use of natural carbonation, rather than adding it artificially.

After the tour, we headed to a semi-private dining area that is available to reserve for your special event.  There, the table was set with our first course including hummus and crudités, freshly baked pita (Bill’s own recipe), and a charcuterie board filled with cheeses, meats, fruits, nuts, and crostini. Chef Jon’s smoked wings came next.  They are NOT your average wings as they are brined, smoked and then crisped. They are delicious “as is” or dipped in the two provided sauces. The wings paired well with the two beers that we sampled, called “Sweating The Small Stuff”. It is a delicious German pilsner with floral, citrus and malty notes. Another favorite was our tasting of “Relax Peggy”, a Belgian blonde with notes of banana, clove and hints of dough. When you meet Bill, ask him about the personal stories behind the beer names.

The next course presented to the table were classic salads, including wedge, Caesar, and their house salad. Each was served chilled and finished with a dressing that complemented its unique personality. 

Entrees came next and included the “Pile It On” sandwiches: a prime rib sandwich with caramelized onions and horseradish crema, the Bridges End Burger with two cheeses and secret sauce, and a fried chicken sandwich with sweet and spicy chili crunch, all served with Chef Jon’s famous french fries.  

The final course was Chef Jon’s pizza, called “Crafted Crusts”. The flavorful, house-made, chewy sourdough crust provided the perfect base for pizza varieties which include cremini mushroom and arugula, margherita, and pepperoni. 

We appreciated Chef Jon taking the time to visit our table and share his professional background as well as his vision for the menu. A graduate of the Culinary Institute of Arts with training in classic French cuisine, Chef Jon aims to craft menu offerings that thoughtfully complement beer selections and are approachable for all guests. Notable dishes that he has worked on for months to perfect include brined and smoked chicken wings, french fries prepared through a three-day process, and house-made sourdough pizza crust. 

Our group unanimously concluded that Bridge’s End was definitely worth revisiting and recommending to friends for the great beer, food, service and inviting atmosphere. Favorite dish votes were tied between the chicken wings and prime rib sandwich. The group was asked what they would like to see on the menu that isn’t there –  dessert was the most popular request.
