For Paul and Kelly Ditterline, Iceland is more than just a destination. It is a place filled with memories, meaning, and a sense of adventure that keeps calling them back.

In April 2026, the Ditterline family set off on their third trip to Iceland, this time with a very special addition. Paul and Kelly were joined by their youngest, Freyr, who was just 3 months old at the time. Back home, siblings Elias, 14, and Lyra, 13, were cheering them on as they returned to one of their favorite places in the world for a seven day getaway.

Their love story with Iceland began years ago on their honeymoon. “We fell in love with the country, culture, and cuisine,” Kelly shares. That connection only grew stronger over time, so much so that they began planning this most recent trip even before they knew Freyr would be joining them.

Food is always a highlight of their Icelandic adventures. Iceland is known for its lamb, which roams freely across the mountains before being gathered by farmers, creating a truly fresh and unique dining experience. The Ditterlines love seeking out small local restaurants where the menu is simple and ever changing, often consisting of just the fish or meat of the day.

They also have a few favorite spots that have become traditions over the years. The seafood soup at Hvammsvik Hot Springs is a must, and the food at Hotel Ranga is always a standout, especially the reindeer carpaccio. One thing they happily skip? The famously bold fermented shark.

For part of the trip, they enjoy exploring towns and restaurants, but they also love immersing themselves in local life. One of their favorite traditions is visiting an Icelandic grocery store, where everything is labeled in Icelandic, and gathering ingredients to prepare meals at their favorite Airbnb.

While their previous trips were filled with high adventure like hiking glaciers, exploring ice caves, chasing waterfalls, and sometimes even a surprise sighting of the Northern Lights, this visit had a slower, more relaxed pace with a newborn in tow. Still, it was packed with unforgettable firsts. Freyr experienced his very first swim in a geothermal outdoor pool in 32 degree weather, and he loved it. He also made his first visit to the beach at the famous black sand shores of Vik. 

The family spent their days taking in Iceland’s natural beauty, from stunning waterfalls and national parks to Icelandic ponies and breathtaking sunsets viewed right from their window in Whales Fjord.

Of course, Iceland always has a way of keeping travelers on their toes. “The main unexpected thing is the weather,” Kelly says. The trip began with a snow blizzard, and strong winds meant staying aware of road conditions and closures throughout their stay.

Despite the unpredictable elements, there was not a single disappointing moment. “Never,” Kelly says. “In Iceland it’s important to enjoy every moment, every incredible site, and always be flexible.”

The most meaningful part of the trip was introducing Freyr to a place that holds such a special place in their hearts. In fact, his name itself is inspired by Icelandic culture, where names are chosen from an approved list. It is a reflection of just how deeply connected the Ditterlines feel to the country and its traditions.

As for whether they will return, the answer comes easily. “Next year!”
