Two Families, One Mission—Exceptional Seafood and Community Connection

Fresh, high-quality seafood isn’t always easy to come by in the Midwest, but Highland Fish Market is changing that for Louisville residents. Owned by two families, the Bedingfields and the Harts, this local gem is more than just a seafood store—it’s a place where freshness, sustainability, and community come together.

Ashley and Matt Bedingfield, originally from New Orleans and Athens, AL, respectively, moved to Louisville in 2014. With backgrounds in metals manufacturing and speech-language pathology, they were searching for a business opportunity that would deepen their connection to the local community. Their longtime friendship with Mark and Sarah Hart made the decision to purchase Highland Fish Market a natural fit. The Harts, who moved to Louisville in 2013 for Mark’s career in the aluminum industry, shared the Bedingfields’ vision of bringing exceptional seafood and unmatched customer service to the area.
Both families are deeply rooted in their love for family life. Ashley and Matt have three children, ages 6 to 11, who keep them constantly on the go with different activities. In their free time, they enjoy entertaining friends, traveling, and relaxing together at home. Mark and Sarah have been married for 29 years and have two children, Claire and Everett. Claire is a pediatric physical therapist, and Everett is currently finishing his degree while working full-time at Highland Fish Market. The Harts also have a golden retriever mix named Pogue, who is very much part of the family.
What sets Highland Fish Market apart is their unwavering commitment to quality. They source fresh seafood daily, ensuring it’s always of the highest standard. Some products require flash freezing upon catch to maintain quality, but every item is carefully selected to provide the freshest options possible. From everyday staples like salmon, shrimp, and cod to specialty items such as sushi-grade fish, whole fish, and even caviar, they offer an unparalleled selection. Every product is responsibly sourced, free of hormones, antibiotics, and added dyes, with a focus on sustainable and ethical fishing practices.
Beyond offering incredible seafood, Highland Fish Market provides customers with the knowledge and confidence to cook it at home. With a chef on staff, they offer guidance on preparation, new recipes, and creative ways to enjoy seafood—even for those who may be hesitant to try something new. Their focus on customer service means that every visitor gets a personalized experience and leaves with exactly what they need.
Exciting things are ahead for Highland Fish Market. They are currently renovating a space on Bardstown Road to bring a second location back to the Highlands, where the original market began years ago. The new storefront in the Shops of Deer Park is set to open this spring, allowing them to serve even more seafood lovers in the Louisville community.
In addition to their expansion, Highland Fish Market recently acquired Lori’s Fish Market in St. Matthews. They are honored that Lori and Doug Elder felt confident in turning over their well-loved business to them as they transition into retirement. This acquisition allows Highland Fish Market to continue its mission of delivering high-quality seafood to even more Louisville residents.
Both the Bedingfields and the Harts believe in supporting the local community beyond their business. Highland Fish Market actively collaborates with other small businesses, donates to local charities, and supports schools in the area. Their goal is not just to provide great seafood but to be a meaningful part of the community they love.
Whether you’re a seafood enthusiast or just starting to explore new flavors, Highland Fish Market is the go-to destination for the freshest, most responsibly sourced seafood in Louisville. Stop by and experience their passion for quality and community firsthand!
