Tell us about your family.
My name is Ric Glenn, and I recently moved to Colorado to launch my food truck business, Grill & Smoke. I’m currently living in Indian Peaks with my brother, Jamie Glenn, his wife Heather, and their two boys, Ethan and Dylan. It’s been a great place to land—such a welcoming neighborhood and a perfect community to start this next chapter.
Can you share a bit about your culinary background?
I’ve spent years working in the food industry, both in professional kitchens and at the backyard grill. What started as a passion for bold flavors and quality ingredients evolved into Grill & Smoke - a way to bring that same fire and flavor to the streets. I’ve always been drawn to the simplicity of grilled food done right, and I wanted to build something where I could share that with the community in a more personal and mobile way.
How would you describe the concept or cuisine of your food truck? What influences your menu choices?
Grill & Smoke is all about unforgettable hot sandwiches, burgers, and sides - fresh off the grill and packed with flavor. Our signature items like the Tri-Tip Sandwich and Philly Cheesesteak are crowd favorites, and everything we serve is built around bold, satisfying, crave-worthy food. The menu is influenced by classic American comfort food with a smoky twist, always focused on quality meats, grilled perfection, and approachable flavor. We also offer many gluten free options, including our homemade gluten free onion rings.
What’s been the biggest challenge of running a food truck?
Logistics. Unlike a traditional restaurant, a food truck is constantly on the move, so every day brings a new location, new setup, and new challenges - whether it’s weather, parking, equipment, or staffing. But the flexibility and connection with the community make it all worth it!
How do you choose where to park and serve?
We try to serve where we know people are looking for something great to eat - local neighborhoods, breweries, festivals, and private events. We keep an eye on community interest and also get invited to a lot of events, which helps us stay connected to where the demand is. Being based in Lafayette, we love staying local and accessible to our Boulder County community.
