Strawberry Rhubarb Pie

Whenever I make Strawberry Rhubarb Pie, I have fond memories of when my daughter was young - she loved baking in the kitchen with me. We loved making all types of pies, especially traveling to local strawberry farms and picking rhubarb straight from our own backyard to make a beautiful pie. The best part was eating that first slice, and then another and another... She's baking with me in the kitchen now at The Dorset Bakery, and I couldn't be happier about that.

Strawberry Rhubarb Pie
Crust:  2 cold sticks of salted butter, chopped
            2 c. AP flour
            1 tbsp sugar
            1/2 c. ice water

For the crust, use a food processor to combine all ingredients. Once the butter resembles pea-sized pieces, slowly add the freezing water, excluding the ice. Let the dough form a ball, remove it and form two dough balls and refrigerate them for half an hour while you make your filling.

Filling: 3 c. sliced rhubarb
            2 1/2 c. chopped strawberries
            1/3 c. light brown sugar
            1/3 c. sugar
            1/4 c. corn starch
             1 tbsp orange juice
             1/2 tsp vanilla
             2 tbsp butter cut into pieces 

Chop and slice all fruit and combine ingredients in the same bowl. Take your chilled dough out of the freezer to roll out for the bottom and top crusts. Use any 9"-10" pie tin you'd like. Place your dough disk into the pie tin and fill it with the bowl of sugared fruit and other ingredients. Take the 2 tablespoons of chopped butter and sprinkle them on top of the fruit. 

For the lattice you will need to roll your dough out to 12" in diameter and use a pastry wheel, pizza cutter, or sharp knife to cut 1/2"-1" wide strips. Pull out every other strip and place aside. With your remaining strips that form a circle, pull back every other strip to weave it with the prior pieces you set aside. Once done, it should look like a basket weave. 

Use egg wash and sanding sugar on top of your lattice pie crust.
Bake at 350°F for 40-45 minutes or until golden brown and delicious.
