Crispy Parmesan Chicken
The cold, long winter is coming to a close and spring is around the corner! March is a month of renewal, changing weather, and new beginnings. The days are longer and the air is warmer. March is a month that transitions us from winter to spring. Unpredictable weather can occur with rain, wind, and even snow that sometimes catches us off guard. The saying “March comes in like a lion and out like a lamb” is certainly true many times. People begin planting gardens and looking for early spring flowers to add color to their yards. March is all about preparing and planting with hope, even if frost still lingers.
This month’s recipe is Crispy Parmesan Chicken. The chicken is baked until golden and crunchy on the outside while staying juicy and tender inside. This Italian dish works well for a weeknight dinner or for guests and can be served with pasta, salad, or even on a sandwich. If you are cooking gluten free, I have included the brands I prefer in parentheses.
