Cherry Delight
December feels like winter has finally arrived! My favorite season is winter with thoughts of snow, cold weather, fires, and celebrations. Many people focus on giving to others and showing random acts of kindness in December. Christmas, Hanukkah and Kwanzaa are celebrated in December with New Year’s Eve rounding out the month. This month’s recipe is Cherry Delight. It has a buttery graham cracker crust, a creamy filling, and a sweet cherry filling. Blueberry, strawberry or peach pie filling can be substituted for the cherry pie filling. If you are making it gluten free, I have included the brand I prefer in parentheses.

Cherry Delight
2 cups graham cracker crumbs (Kinnikinnick gluten free graham crackers crushed)
1 stick melted butter
1 8oz cream cheese, softened
¾ cup sugar
2 envelopes Dream Whip
1 can cherry pie filling
Mix crumbs with butter and spread about 2/3 on bottom of 9 x 13 dish. More crumbs are needed on the bottom than the top. Mix both envelopes of Dream Whip according to directions on box. Blend softened cream cheese and sugar with Dream Whip until smooth. Spread half of Dream Whip mixture on crumbs in dish. Spread cherry pie filling on top of this. Then spread remaining Dream Whip mixture on next. Top with remaining crumb mixture. Chill at least 4 hours.
