From Our Kitchen to Yours: Awesome Carnitas

We’ve lived in this neighborhood for four years now, and every day reminds us of what a special place this is. The people make it feel like home more than anything else. There’s an easy kindness here, a willingness to help one another, and a sense of connection that feels rare these days. We’re grateful to be part of it.
This month, I’m excited to share a recipe that has become a true favorite in our home: Awesome Carnitas. The name fits. This dish brings everyone to the kitchen, fills the house with the best smells, and somehow tastes even better the next day. It pairs perfectly with Stevie’s guacamole, which has become the required side anytime Carnitas hit the table.
My Carnitas journey actually began years ago when we lived in San Antonio. H-E-B had a fantastic, budget-friendly cut of pork that worked beautifully in a crockpot, and I started experimenting from there. What began as a simple slow-cooker dinner quickly turned into a family staple. I love that the process is easy enough for kids to help, and the ingredients are simple, fresh, and easy to keep on hand.
One thing that makes this recipe my own: many Carnitas recipes start by searing the meat before it goes into the crockpot. I discovered that searing at the end creates a much better texture. The edges get beautifully crispy, and it’s an amazing way to reheat leftovers.
Carnitas work for almost any meal. Taco night? Perfect. Rice and beans? Easy. Breakfast? Add eggs and sweet potatoes and you’re set. It’s the kind of recipe that brings people together, and sharing it with neighbors feels natural in a community like ours.

Awesome Carnitas Recipe

Ingredients:
  • 3–4 pounds H-E-B pork for Carnitas
  • 2 tablespoons cumin
  • 2 tablespoons oregano
  • Juice of one medium orange
  • Juice of one small lime
  • 1 cup chicken or vegetable broth
  • 1 jalapeño, finely diced
  • ½ yellow onion, diced
  • 4 cloves garlic, diced
  • Salt and pepper to taste
Instructions:
  1. Season pork generously with cumin and oregano.
  2. Place seasoned pork in a crockpot.
  3. Combine all remaining ingredients and pour over the meat.
  4. Slow-cook on low for 6–8 hours until the pork is tender.
  5. Before serving, shred or smash the pork and sear it in a hot frying pan to create crispy edges.
