Fall-Off-the-Bone BBQ Baby Back Ribs

There is something magical about gathering family and friends around the grill on a warm summer evening, and these BBQ Baby Back Ribs never disappoint. After years of experimenting with different methods, I discovered that the secret to truly tender ribs is simple: slow oven roasting with a flavorful beer steam bath, followed by a quick finish on a hot grill.
The result is everything you want in great barbecue—juicy, tender meat with a smoky, caramelized crust that tastes like it has been cooking all day. Best of all, the hands-on time is minimal, leaving you plenty of time to enjoy your guests.
Ingredients
For the Ribs
  • 1 rack baby back ribs
  • 12 ounces beer (amber ale or your favorite medium-bodied beer)
  • BBQ sauce, to taste
For the Dry Rub
  • ⅓ cup dark brown sugar, packed
  • 2 teaspoons sweet paprika
  • 1 teaspoon black pepper
  • 1½ teaspoons seasoned salt
  • 1½ teaspoons garlic powder
  • 1½ teaspoons onion powder
  • ¼ teaspoon cayenne pepper (optional)
Directions
  1. Preheat the oven to 250°F.
  2. Remove the thin silver membrane from the back of the ribs. This important step allows the flavors to fully penetrate the meat and ensures a tender bite.
  3. In a small bowl, combine the brown sugar, paprika, black pepper, seasoned salt, garlic powder, onion powder, and cayenne pepper. Generously rub the seasoning mixture over both sides of the ribs, pressing it into every surface.
  4. Place the ribs on a foil-lined baking sheet or roasting pan. Pour the beer into the bottom of the pan, being careful not to wash off the seasoning. Cover tightly with aluminum foil.
  5. Bake for approximately 3 hours, or until the meat is tender and a fork slides easily into the thickest part. The ribs should be tender but not yet falling apart.
  6. Preheat your grill to medium-high heat. Brush the ribs generously with your favorite BBQ sauce and grill for 3 to 5 minutes per side, watching carefully as the sauce caramelizes and develops a delicious char.
  7. Remove from the grill, let rest for a few minutes, then slice and serve.
A Few Rib-Making Secrets
  • Low and slow wins every time. The gentle 250°F heat breaks down connective tissue, creating that irresistible melt-in-your-mouth texture.
  • Don't skip the membrane removal. It makes a noticeable difference in tenderness and flavor.
  • The beer steam bath keeps the ribs juicy while adding a subtle depth of flavor.
  • Finish on the grill for authentic BBQ flavor. The caramelized sauce and lightly charred edges are what make these ribs unforgettable.
Whether you're hosting a backyard barbecue or enjoying a quiet evening with family, these ribs are guaranteed to become a summer favorite. Don't be surprised if everyone asks for the recipe—and seconds.
